The list I have below for our freezer guide contains some of the things I try to always have on hand. It gives me the basics I need to support healthy meal choices. We have been eating a Keto / Low Carb lifestyle since 2015 and I’ve found that if I keep some of these staples in my kitchen… it’s so much easier to make healthy choices! As you find recipes your family loves, add those basics to your fridge, freezer, or pantry!
Stock Your Freezer
Our freezer is stocked full of delicious low carb foods that fuel our day. Over the years, our freezer contents have changed quite a bit. We used to have boxed dinners on hand and desserts. I used to have a small bowl of ice cream EVERY night before I started eating low carb.
Not anymore! Now our freezer tends to be full of basic protein (like chicken breast or ground beef) and home made meals I’ve prepped for later! Here are some of our staples…
*Riced Cauliflower - Before lowering our carbs, we used to always have pasta in our pantry. It goes with just about any protein and marinara or Alfredo sauce and was aways a simple meal we could make in a pinch.
Now that we don’t eat pasta…. we needed an alternative! For us, that’s been frozen riced cauliflower. While it can be made fresh, we prefer it frozen so that it’s always available! We do have some simple tips on prepping your frozen riced cauliflower!
Our Meatball recipe is delicious over riced cauliflower and our Pizza Casserole uses riced cauliflower as well.
*Protein - We usually have an option or two in our freezer, but our grocery stores are so close, we often buy our meat fresh. However, I know that many families LOVE to stock up on frozen meat for those busy days!
For us, we tend to have carnitas or pulled pork (we get both from Costco) in the freezer. Those are both meals we can easily reheat and they’re ready to go. We’ll usually have some shrimp as well since they cook up so fast! Shrimp make a great last minute lunch and are full of protein. A little bit of garlic and butter is also you need to add!
When we’re at our cabin over the summer, we always have hamburgers in the freezer. What’s your favorite protein to keep in the freezer?
*Ice Cream - I have ice cream listed here, but maybe it’s a different kind of sweet treat for you. I used to LOVE ice cream. But since cutting my carbs and sugar it’s just not something that I crave anymore. There are some great brands out there though! Just make sure you eat in moderation.
Right now I’m loving our Peanut Butter Almond Bites in the freezer as my dessert or sweet treat. Our Cookie Dough Balls are great too!

*Prepped Meals - Our favorite home made recipes! We ALWAYS have a casserole or two in the freezer plus something like Coffee Cake Muffins for us and our low carb Banana Muffins for the kids! While we don’t have as much freezer food as we used to, we definitely have lots more home made food in the freezer! How about you?
Here’s a tip. Any time you make a soup or casserole that your family loves… like our lasagna casserole or our broccoli cheddar soup, make a double batch! Cook one for dinner and save the second in the freezer for a busy night. Nick and I have made individual chicken parmesans in small ramekins and we love having those for lunch or dinner when we’re not eating together!
*Frozen Avocado - And other fruit! Did you know that many grocery stores sell frozen avocado in the frozen fruit section? It’s great for smoothies! We mix it up with some spinach and berries for a delicious lunch. We also keep berries in the freezer. Frozen blueberries are actually a delicious snack that’s sweet and helps cure any craving! Or, use them in some of our recipes. You can buy berries frozen, or when they’re on sale, stock up and freeze them yourself!
