Recipe:
• 1 ½ cups chopped pecans
• 1 cup sliced almonds
• ½ cup unsweetened coconut flakes
• 2 tbsp hemp hearts
• 2 tbsp ground flaxseed
• 1 ½ tsp ground cinnamon
• ¼ tsp nutmeg (optional)
• Pinch of sea salt (omit if butter is salted)
• ¼ cup unsalted butter, melted
• 2 tbsp sweetener
• 1 large egg white
• 1 tsp vanilla extract
Instructions
1. Preheat oven to 325°F and line a baking sheet with parchment.
2. In a large bowl, mix together pecans, almonds, coconut, hemp hearts, flaxseed, cinnamon, nutmeg, and salt.
3. In a small bowl, whisk melted butter, sweetener, and vanilla extract until combined.
4. Add one egg white to the wet ingredients and whisk until lightly frothy—this is your secret weapon for crunchy clusters.
5. Pour the wet mixture over the dry ingredients and stir until everything is coated evenly.
6. Spread on the baking sheet and gently press down.
7. Bake for 22–26 minutes, rotating the pan once halfway through. Keep an eye near the end!
8. Let cool completely before breaking into clusters.
