Ultimate Keto Low Carb Loaded Broccoli Salad
This Keto Broccoli salad recipe is SO GOOD we just eat it for lunch sometimes! We take it up a notch with cheddar cheese and bacon. And the flavor...it's a crowd pleaser for sure!
Broccoli salad is a summer BBQ staple, so we decided to make an easy Keto version. Make an extra batch because you won't have leftovers!
3/4 C Avocado Mayo
1 Tablespoon Apple Cider Vinegar
2 T Granulated Erythritol (Swerve)
Dash Black Pepper
Then add in:
4 C Broccoli
5 Slices Bacon, Cooked and Crumbled
6oz Cheddar Cheese, Cubed
3 Tablespoons Red Onion
Refrigerate and Serve!
Serves: 8, about 3/4 cup each

The broccoli is raw!
We cube the cheddar cheese, but you can shred it as well.
If you need to adjust the macros, you can take out 1/4 C Avocado mayo or decrease the amount of cheese!
