Chocolate Covered Peanut Butter Cookies
Peanut Butter and Chocolate?! Yes Please!
*You can substitute any nut butter! Just make sure no sugar is added!
I used to love Peanut Butter Cups. When I started Keto, I always stayed away from the chocolate dipped desserts....because it seemed so hard and messy! I've found out that it's actually pretty easy!
These were a hit with the whole family. It makes a big batch, but they're perfect for the freezer!
Kitchen Items You'll Need:
Double Boiler or microwaveable bowl
Parchment Paper
Here are the Ingredients You'll Need:
Peanut Butter
Coconut Flour
Powdered Sweetener
Liquid Stevia (optional)
Vanilla
Salt
Chocolate Chips (Lily's or dark chocolate)
Coconut Oil or Butter

Next time I'll roll them a little flatter
If you're looking to save on carbs, halve the chocolate. You can even just drizzle it on if you'd prefer.
I also decreased the flour from the initial recipe
Combining powdered Swerve and liquid stevia reduces the aftertaste
Recipe:
1 1/2 Cup Peanut Butter
3/4 Cup Coconut Flour
1/4 Cup Sweetener minus 1 Tablespoon (we prefer powdered)
2 squirts of Stevia
1 tsp Vanilla
Pinch of Salt
1 1/2 Cup Chocolate Chips (to melt)
1 Tablespoon Coconut oil or butter, softened
Combine all ingredients together. Roll into balls, flatten and freeze for about an hour. Melt chocolate and butter. Dip cookies in and let dry on parchment paper! Freeze leftovers.
